Who says you can’t have popcorn for breakfast?!
Check out this amazing popcorn granola creation from our friend @thatcakeguyldn

 

 

Ingredients:

1 x 17g popcorn (salted caramel)

50g oats

40g flaked almonds

40g mixed seeds (I used sunflower & pumpkin)

50g honey

25g unsalted butter

1/2 tsp cinnamon

50g mixed dried fruit

 

Method:

  1. Put unsalted butter and cinnamon in a saucepan and heat on low until melted and combined. Set to one side.
  2. In a brownie tin mix together the popcorn, oats, flaked almonds & mixed seeds.
  3. Pour the liquid mixture over the dry mix and make sure everything is evenly coated.
  4. Bake at 160 degrees for 15 minutes then remove from the oven and give it a mix before placing it back in for a further 15 minutes.
  5. Allow to cool before mixing in the dried fruit.
  6. Serve with yoghurt and fresh fruit for a delicious breakfast.
  7. Any leftover granola can be stored in an airtight container for up to five days.
